Amla powder raita: a mild nellikai thambli for rice meals

Raita aur thambli dono Indian meals ka woh halka, thanda side hain jo chawal, dal ya roti ke saath balance laate hain. Karnataka gharon mein nellikai thambli (amla thambli) ek purani dish hai — usually fresh amla ubaal kar banayi jaati hai. Jab aapke paas seedless amla powder ho, wahi mild tangy note kuch minute mein mil sakta hai, bina stove par extra kaam ke.

Recipe: Amla powder raita (nellikai thambli) — 2–3 servings
Yeh portion do se teen logon ke liye ek chhota katori side hai. Pehli baar amla powder kam rakhein — taste adjust karna aasaan hota hai.
- 1 cup fresh whisked curd (dahi) — thoda patla karein: 2–4 tbsp paani ya thanda boiled-and-cooled paani mila kar consistency doodh-shake jaisi rakhein (thick lassi nahi).
- 2 tbsp fresh grated coconut — mixer mein 2 tbsp paani ke saath smooth paste bana lein.
- ½–1 tsp Shuddha Sattva Amla Seedless Powder — pehli baar ½ tsp se shuru karein; paste mein pehle mix karein, phir dahi mein daalein (lumps kam aate hain).
- Namak — taste ke hisaab se, thoda kam se shuru karein.
- Tadka: ½ tsp oil garam karein, ½ tsp rai (mustard seeds) crackle hone dein, 1 sukhi lal mirch, 5–6 curry patta, aur ek chhota pinch hing — isse raita ke upar daalein.
Coconut-amla paste ko whisked dahi mein achhe se milaayein. 10 minute rest dein taaki flavours settle hon. Garam chawal ke saath serve karein — upar se halka ghee optional hai.
Thambli aur raita — farak kya hai?
Dono dahi-based sides hain. Thambli (especially Karnataka style) zyada patla hota hai — almost pourable, rice ke saath mix karke khaya jaata hai. Raita kabhi thoda thick rehta hai (boondi, cucumber wale versions). Yeh recipe dono ke beech mein hai: patla enough for rice, thick enough to hold on a spoon.
